This is one of my favorites among all fruit preserves and jams, Rhubarb, a reddish pink stalk which looks like celery is harvested through the summer, has a pleasing tartness, so it pairs just perfect with sweet strawberries in a jam and it brightens the color to make it even more pleasant.
